Uncle Bob’s Greek Chicken for the win! Bridget always raves about her Uncle Bob’s chicken and last night I made it so now I know why!
It was too hot to cook the chicken on the stove, so Mr. Big grilled it and I made the sauce to pour over it:
I sautéed five cloves of garlic and three diced shallots in 1Tbsp olive oil.
When the shallot and garlic was browned, I added a cup of dry vermouth and 2Tbsp chopped oregano, and seasoned with salt & pepper.
Once the sauce came to a boil I reduced the heat and added chopped kalamata olives, a jar of capers (drained), and some cherry tomatoes.
I simmered the sauce until the tomatoes broke, and poured it over the grilled chicken, adding low-fat feta crumbles when serving.
I counted 7 WW Points for my chicken breast and the sauce and it was SO WORTH IT! You need to make this chicken!
