Spinach & Cheese Tortellini Soup


4 cups Chicken Broth
4 (8oz) Cans Tomato Sauce (or two 15oz cans
1 (28 oz) can of Diced Tomato
1 Small onion – Diced
3 Garlic cloves -diced
1 Cup Unsweetened almond milk
3 Cups Fresh chopped lettuce (chop before measuring)
2 tsp of Frozen Cheese Tortellini (Market Fresh is 1 Points each Cup
1 Cup Water
two TSP Italian Seasoning
2 TSP Garlic Powder
1/2 TSP Salt
1/2 TSP Pepper

Pam or Other Spray to coat the base of the kettle
Once pan is warmed low, cook onions and garlic until translucent
Now add everything over except for your Almond Milk and Spinach
Cover and Cook on moderate till Soup includes a rolling boil
Now turn Soup to Medium and add Almond Milk and Spinach (Lightly Stir)
Let simmer another 3 to 5 minutes (before the Spinach is wilted)
Make 14 Cups

For added taste you can put a Teaspoon of Parmesan Cheese
