Mediterranean Dip

Now that we have warmer months ahead and long days to hang out on the patio, it’s time for recipes that don’t take much effort or time in the kitchen. Who has time for that when the outdoors are calling our names, especially during quarantine. When summer starts, I could care less about cooking. Sometimes I just tell my husband he is on his own and needs to figure out dinner for himself, which never happens in the winter. Like tonight…he doesn’t know it yet, but I’m about to tell him he needs his wife is off for the summer. Every meal is up to him at this point. I have egg chairs on the patio I’ll be sitting in.

Just kidding, I don’t trust my hubs in the kitchen. Sorry, lover.

Speaking of my lover, I think I’m going to have him on the podcast soon! The bastard has pushed back for years since we’ve kept his identity a secret for so long, but I think I’ve finally talked him into sharing his voice with the world. I’m thinking about having people on instagram write in questions and we will answer them together on the podcast. Which should get interesting. I was explaining to him this morning that people could write in questions like ‘who is the better driver’ and the conversation would quickly turn into a debate since I obviously think I’m the better driver and he thinks the same about himself. Which is dumb because he’s crashed cars and I’ve only broken a mirror off mine. Anywho, that will a super fun and super frustrating podcast. I can’t wait.

Wanna talk about something random? Cool. Have you guys seen Elon Musk’s new baby name? I would like to spell it for you, but one part of the name has an A and E that are joined together and I have no idea how to write that out myself on a computer. It also includes A-12 in the name. I honestly think his child may be a robot. He’s been working so much in AI, how do we know it’s not? Also, does this mean the new baby names of the next generation are going to includes numbers and symbols? Like if we have a baby, will the trending girl name be Wh!tn8? Or will we make it a trend? I hate my current car SO MUCH right now (mostly because the leasing department sucks hugs wang) and a Tesla keeps sounding better and better. So if I’m going to support Musk and his trend into the electric car world, I might as well be part of his next AI baby trend. Ya feel me? Ok I’m going to go now. Time to look at Teslas.

INGREDIENTS :

For the hummus

  • 4 cups cauliflower florets, steamed
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons tahini
  • zest of 1 lemon
  • juice of 1 lemon
  • pinch of ground cumin
  • salt and pepper, to taste

For the toppings

  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup pitted green olives, diced
  • 1/4 cup pitted kalamata olives, diced
  • 2 tablespoons capers
  • fresh dill, for garnish
  • fresh mint, for garnish
  • flake salt, for garnish
  • black pepper, for garnish
  • 1 green onion, thinly sliced

DIRECTIONS :

  1. Steam cauliflower.
  2. In a high speed blender), combine the cauliflower, olive oil, tahini, lemon juice and zest, and cumin and process until smooth. Add salt and pepper to taste and then set in the fridge to cool for 30 minutes or until cold.
  3. Chop all veggies.
  4. Pour hummus into a shallow bowl then top with bell pepper, cucumber, olives, capers, dill, and mint. Then sprinkle with salt and pepper. 
  5. Serve with taro chips or whatever chip you prefer!
