The thing about being in quarantine is that you try to not go to the store as much as possible. Which restricts what can be whipped up at home, especially when you run a food blog. Which also means I have been turning to baking far too much. Which also also means my hubs is annoyed since I’m stuffing his face with warm treats on a daily basis. Tough life he lives. I’ll stop saying which now. But really, my baking is out of control lately. Chocolate chip oat bars one day, oatmeal cookies the next, and now these. It’s an addiction that I’m not fully ready to give up yet, ok? So hopefully you’re on board with eating warm treats all day errrrrrday. We’re in this together, people!

How’s the ole’ quarantine life going for you these days? I haven’t felt very bummed about it until it snowed on our 4 year anniversary and there was no where to go and no real way to celebrate. So we snacked all day and watched Peaky Blinders. That show is my new obsession. I found a giant painting of Thomas Shelby and I’m tempted to get it for our house…is that weird? My husband already knows I have a major lady boner for a fictional character, so he may have an issue with it. But he’ll get used to it. I mean, he’ll have to since we have NO WHERE TO GO. Speaking of, I wonder what Cillian Murphy and his drool-worthy cheekbones are up to these days. I wonder if he’s just staring into his own white walker blue eyes in the mirror at home, method acting it up while prepping for his next roll. I’d love to know. If you’re friend with him, feel free to give me the scoop. And let him know that I envy his cheekbones.

Other than having feelings for a fictional character, I’ve been spending most of my days either creating new fitness programs for you guys OR hanging out on Zoom. How is Zoom even handling the amount of people that use it at this point. What is their server like and how does it not crash? Riddle me that. I’ve already been on two Zoom calls today, one with friends and one for business, and I may have more tonight. But honestly, I feel like the Zoom calls are making me miss those people even more. I had a Zoom call with a bunch of people from my CrossFit gym this morning and now all I want is to be back in that gym with those people that make me smile the most. Going to the gym is definitely what I miss the most during this quarantine…now tell me, what do you miss most??

INGREDIENTS :

  • 1 cup tahini
  • 1 cup coconut sugar
  • 1/4 cup melted ghee (or coconut oil, etc.)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup paleo baking flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • pinch of fine salt
  • 1/2 cup chocolate chunks
  • pinch of coarse salt

DIRECTIONS :

  1. Preheat oven to 350 degrees F. Line an 8×8 baking dish with parchment paper.
  2. In a large bowl, whisk together tahini, coconut sugar, ghee, vanilla extract, and eggs.
  3. Once combined, add in the paleo baking flour, cinnamon, baking soda, and a pinch of salt. Then fold in chocolate chunks.
  4. Pour mixture out into baking dish and spread out evenly. Top with coarse salt.
  5. Place in the oven to bake for 40-45 minutes, until brown and the middle is cooked through. Let cool for 5 minutes before removing from baking dish and cutting into 16 squares.
